The manufacturer recommend: Any firm to hard cheese that melts well without too much oil can be melted in the raclette pans. This obviously depends on your own tastes, but for that authentic alpine flavor, the manufacturer would recommend using traditional swiss or french alpine cheeses like the appliances namesake raclette, Tomme de Savoie, gruyere, or beaufort, all of which can be obtained from your local deli counter.
