Henckels makes some great knifes at the higher end of their line, and this boning knife is one of them. Crazy sharp and just a little flexible to help you get between the bones when you’re boning a chicken.
Got this to add to my Henckles knife set, which didn’t come with a boning knife, though the knife block came with some extra slots to let you customize the set. Very happy with this knife’s quality, sharpness, and longevity. Would recommend.
